This time we will come and discuss a few words use in a kitchen, how Teochew topolect writes.

Topolect: means a language use in a region in a particular country. Do NOTE: Teochew is NOT a dialect of Mandarin. We have our own characters, our own grammar, our own language structure etc. Some governments want to do a cultural genocide of languages spoken in different regions of China and they came up with this concept of "dialect" and say Teochew is a dialect of Mandarin. If it is a dialect, then I can speak Teochew and Mandarin speakers should be able to understand me, but they do not. 

I am NOT saying we should not learn Mandarin. We should, because it is our National Language. 

If I have not learnt Mandarin, then I could not have improved my Teochew, because all the Teochew language learning materials are written and translated into Mandarin.

Zhang Xiao Shan explains hou5 on page 880 of his 2nd Ed dictionary as follows.

用笊籬從沸著的稀飯中撈起飯粒去掉飯湯使成乾飯|用笊篱从沸着的稀饭中捞起饭粒去掉饭汤使成干饭

use a strainer, from the middle of a boiled rice porridge, scoop up rice grains to get rid of the liquid from the rice porridge, causing the rice porridge to become dry cooked rice.

Furthermore, it is sometimes said: “One’s stomach is very hungry, quickly ladle up two bowls of cooked rice from a pot of congee to eat.”

In Standard Chinese, means dried rations 乾糧 which people take with them on expeditions.

The key point about Teochew congee is that the rice grains are cooked for a short time in hot boiling liquid and the rice has not “opened up” but is cooked. Therefore, to ladle up drained cooked rice grains means that the rice is more or less like cooked rice, which is called bung7飯|饭。
