Let us listen to Iab Hui 葉飛 on how he says niam1 and cib8
He is making noodles which he called as niam1 min7 gao5 拈麵猴
On the title of his video he used the niab4 捏 character. Niab4 and niam1 have similar meaning which is to pinch. Do watch the video!
Niab4 捏 is when one pinches the end of a dumpling wrapper in order to join two ends together. As for niam1 one pinches the dough like the way Iab Hui is doing in the video i.e. cover a larger area.
When he was kneading the dough, he used the word cib1 [no character] which means to knead - 揉 in Mandarin.
And after making the dough, he rested the dough and he explained this process as cên2 醒
