al dente

If you were to listen to this video, you would hear the Teochew guy using the term tang5sên3 and our Teochew word is kiu3 and the European word is al dente. The guy speaks in half Mandarin and Teochew.

Zhang Xiao Shan on page 880 of his second edition dictionary writes kiu3 means 麵條, 米粉, 餜條 [粿條], 等煮熟以後比較乾而富有彈性 – i.e. noodles having a flexible or elastic texture i.e. al dente and this is often written as QQ in Chinese subtitles and the Q has a similar sound to our kiu3. Similar is not the same and so pronounce kiu3 properly

We Teochew people should be proud that other Chinese people use our Teochew word “kiu3” to describe an al dente texture in food and do explain to people that al dente pasta is said as kiu3 i3min7 in Teochew Uê.
