Iab Hui has uploaded another cooking video and I have been a bit slow in translating what he has said in the video.

pu5 浮is the Teochew word for deep fry and za3 炸 is from Mandarin.

Did Iab Hui mean to say zing1 真 ? And if he means zêng which character would it be?
